Keto Pumpkin Pie Fat Bombs

I have had a few people ask me for this recipe and so I decided to do a blog post on this tasty Keto treat. It’s my go to snack when I’m hungry and dinner is near but I don’t want to eat anything that will ruin my appetite. Pumpkin based treats are typically eaten in the fall around Halloween time, but I think this treat is great anytime of the year!

What I love about this recipe is that it’s easy to make and you can store it in the freezer. When I want a square, I take it out and let it soften for about 20 minutes. Sometimes, I don’t want to wait 20 minutes and eat it frozen. Sure, it’s a bit hard, but it forces you to savor and eat it slowly. The taste reminds me of vanilla ice cream and it melts in your mouth!

There are some key ingredients that I recommend since the quality is assured. I’ll post links to them.

Now onto the recipe.

EQUIPMENT 

  • Small saucepan
  • Spoon for stirring
  • Rectangular shaped glass storage container with lid [About a 9×7 inch diameter]
  • Knife

INGREDIENTS

DIRECTIONS 

  1. Place coconut butter, coconut oil, vanilla extract and pumpkin pie spice into a small saucepan and melt over low to medium heat. Stir the ingredients until they all blend together about 3-5 minutes 
  2. Add the pumpkin puree and mix until well combined. Remove from the heat and stir in the Equip vanilla protein powder. Mix well. 
  3. Transfer the mixture into the rectangular shaped storage container and spread it around so it’s evenly distributed. 
  4. Place it in the refrigerator for 3 hours to allow it to firm up. Once the Pumpkin Pie Fat Bomb mixture is solid enough, take a knife and score it into squares. Make the size of the squares as big or small as you like. 

You can either keep them in the fridge or put them in the freezer to last longer. If you put them in the freezer, I recommend loosening up the squares, so it’s easier to take one out when you want one.
